Valentine's Day is around the corner, and what better way to celebrate than with delicious gluten-free vanilla cupcakes? Whether you're spending the day with your significant other, your friends, or your family, these cupcakes are sure to spread love and sweetness to everyone around. Plus, they're perfect for my girls who adore the classic flavor of vanilla. So, let's dive into the recipe and make this Valentine's Day extra special!
With the rack in the middle position, preheat the oven to 350°F (180°C). Line cupcake mold with parchment paper. You can also oil and flour them.
In a bowl, combine the gluten-free flour, ground almonds flour and baking powder. Set aside.
In another bowl, beat the egg yolks, egg, oil, milk, vanilla and ¼ cup (55 g) of the sugar with a whisk. Stir in the dry ingredients and mix until smooth. Set aside.
In a third bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form. Fold half of the meringue at a time into the batter, stirring vigorously (see note). Spread the batter into the prepared pan.
Bake for about 35 minutes or until a toothpick inserted into the centre of the cake comes out clean. Let cool completely on a wire rack before unmoulding.
½ cup unsalted butter, softened
2 cups powdered sugar
1-2 tablespoons milk or cream
1 teaspoon pure vanilla extract
In a large mixing bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, mixing well after each addition, until smooth and creamy.
Mix in the milk or cream, one tablespoon at a time, until the desired consistency is reached.
Stir in the pure vanilla extract until fully incorporated.
Decoration & Assembly
Valentine's Day-themed sprinkles
Heart-shaped sugar decorations
Once the cupcakes have cooled completely, pipe or spread the frosting onto each cupcake using a piping bag or spatula.
Decorate the frosted cupcakes with Valentine's Day-themed sprinkles and heart-shaped sugar decorations for an extra festive touch.
Pro-Tip: Don't forget to pass the gluten-free flour through a mesh sieve as it tends to be more dense.
