Ingredients

- 0.5 lb of succulent lobster meat, diced
- 0.5 lbs of mini shrimp, peeled and deveined
- 0.5 lb of flaky white fish fillets or salmon, cut into bite-sized pieces
- 1 cup of fresh, juicy mussels
- 1 cloves of garlic, minced
- 1 onion, finely chopped
- 1 cup of dairy-free mozzarella cheese
- Zest of one lemon
- Salt and black pepper to taste
- 1/2 tsp of paprika (adjust to taste)

Mashed potatoes
- Dairy-free butter
- 1/4 cup of dairy-free, gluten-free creamer
- 2 cups of potatoes, peeled and diced

Cauliflower Cream
- 1 cups of potatoes, peeled and diced into bite-sized pieces
- 1 cup of dairy-free, gluten-free creamer
- 1 head of cauliflower, cut into florets
- 1 cup of gluten-free vegetable broth

Instructions

  1. Prepare the Mashed Potatoes: In a pot, boil the diced potatoes until they are tender. Drain and return them to the pot. Add dairy-free butter and dairy-free, gluten-free creamer to the potatoes. Mash the potatoes until smooth and creamy. Season with salt and black pepper to taste. Set aside.
  2. Prepare the Cauliflower Cream: In a separate pot, boil the diced potatoes and cauliflower florets until they are soft and fork-tender. Drain the potatoes and cauliflower, and transfer them to a blender or food processor. Add dairy-free, gluten-free creamer and gluten-free vegetable broth. Blend until you have a smooth and creamy cauliflower cream. Set aside.
  3. Prepare the Seafood Mixture: In a large skillet, heat some dairy-free butter or oil over medium heat. Add minced garlic and chopped onion. Sauté until the onions become translucent. Add diced lobster, mini shrimp, flaky white fish or salmon, and mussels to the skillet. Sauté for a few minutes until the seafood is cooked through. Season with salt, black pepper, and paprika for a flavorful kick.
  4. Assemble the Casserole: Preheat your oven to 375°F (190°C). In a casserole dish, spread a layer of the prepared mashed potatoes evenly across the bottom. Carefully spoon the seafood mixture over the mashed potatoes, distributing it evenly. Pour the cauliflower cream over the seafood mixture, ensuring it covers the entire casserole.
