Classic Banana Bread

Banana bread is a timeless favorite, loved for its moist, tender crumb and the comforting aroma that fills the kitchen as it bakes and for sure our family's favorite. In this gluten-free rendition, we'll be swapping traditional flour for a blend that's friendly to those avoiding gluten, without compromising on flavor or texture. 

It is either used as a muffin to fill dinner boxes on weekdays or to make a tiered cake for holidays.

  • 8 portions cake or 18 small muffins
  • 20 min prep time | 30 à 60 minutes of baking

Ingredients

  • 3/4 cup Silk Nature almond yogurt
  • 5 ml baking soda
  • 1/2 cup Becel Vegan Margarine
  • 1 cup of organic raw sugar
  • 2 eggs
  • 2 ripe bananas
  • 10 ml vanilla extract
  • 2 cups of flour La Merveilleuse
  • 5ml baking powder

Instructions

  1. Preheat oven to 350°F. Butter and flour cake mold or muffin pans.
  2. Mix yogurt and baking soda.
  3. Mix butter and sugar until homogeneous.
  4. Add the eggs stir until the eggs are blanched.
  5. Add the bananas and vanilla.
  6. With the wooden spoon mix flour and baking powder.
    Add the yogurt mixture and fold in.
  7. Pour into the pan and bake in the center of the oven between 30 and 60 minutes depending on the mold used.

**Note: It is possible to add chocolate pieces or nuts to the preparation.
